Ingredients for Vegetable Paratha
Flour – 2 bowls
Potato boiled – 1
Cauliflower grated – 1/2 cup
Green peas – 1/4 cup
Capsicum chopped – 1/4 cup
Carrot grated – 1/4 cup
Cabbage grated – 1/4 cup
Ginger-green chili paste – 1 tsp
Turmeric – 1/2 tsp
Chaat masala – 1/2 tsp
Amchur – 1/2 tsp
Red chili powder – 1/2 tsp
Oil – as required
Salt – as per taste

How to make Vegetable Paratha
To make Vegetable Paratha, first sieve the flour in a vessel. After this, add salt and 1 teaspoon oil to the flour and mix it well. After this, knead the dough by adding water little by little. Then cover the dough with a cotton cloth and keep it aside for 10-15 minutes. During this, peel and mash the boiled potatoes in a vessel. Add grated carrot, cabbage, cauliflower and peas to it and mix.

Now put oil in a pan and heat it. When the oil becomes hot, add all the vegetables and fry for 2-3 minutes. After this, add turmeric, amchur, garam masala, chaat masala, red chili and a little salt and mix it all well. Now turn off the gas. Keep in mind that vegetables do not have to be overcooked. Now take the dough and after kneading it once more, make balls out of it.
Now take a ball and roll it into a round and place vegetable stuffing in it. Close it by pressing it from all sides and then make a triangular or circular roll. Roast the paratha in a nonstick pan and apply oil. Once it becomes crispy from both the sides, take it out on a plate. Similarly prepare all the parathas. Serve delicious vegetable parathas with chutney and butter.
