600 grams fresh chicken
300 grams rice
250 grams onion
50 grams ghee
6 almonds
2 tsp cashew nuts
2 tsp pistachios
2 tsp raisins
1 tsp ginger garlic paste
2 teaspoons salt
1 teaspoon red chili powder
2 tsp lemon juice
1 teaspoon cumin
1/2 tsp fennel
1 tsp coriander seeds
2 bay leaves
1 cinnamon stick
5 cloves
5 black pepper
2 black cardamoms
5 green cardamoms
1/2 tsp saffron

How to make Mughlai Pulao

1. First of all, put small pieces of chicken in a bowl. Then add salt, red chili and lemon juice to it and mix well. After this you keep it for about 2 hours to marinate. You can also keep it in the fridge.
2. Now heat some ghee in a pan and then add cashews, raisins, pistachios and almonds and fry them well. In another frying pan, add chicken pieces and fry them till golden brown. After this, take out the chicken and dry fruits and keep them in a plate.
3. Now chop the onion and fry it and add ginger-garlic paste to it. After this, add cumin, fennel, coriander, bay leaf, cinnamon stick, clove, black pepper, black and green cardamom and salt.
4. Now add rice to this mixture and then add water and saffron and mix well. After some time you mix the fried chicken in it and cook it for about 20 minutes.
5. When your chicken and rice are cooked well. Then add the mixture of roasted nuts to it. Now mix all the things and keep it for some time. Now your Mughlai Pulao is ready, which you can serve.
