Ingredients for making Jaggery Sesame Whey
Wheat flour – 400 grams
Jaggery – 150 grams
Sesame – 150 grams
Desi Ghee – 50 grams

Method of making Jaggery Sesame Whey
To make jaggery-sesame buttermilk, first take jaggery and break it into small pieces. Now put 1/2 cup of water in a vessel and put jaggery in it, keep it on the gas to heat it on medium flame. During this, keep stirring the jaggery with the help of a ladle. When the jaggery dissolves completely in the water, then turn off the gas. Now add ghee to it and mix it well, so that the ghee melts completely in the jaggery solution. When the solution cools down, sieve it so that if there is any dirt, then it is removed.

Now take another vessel and put the flour in it. After this, add sesame seeds to the flour and mix both of them well. Now knead this dough hard with jaggery water. While kneading the dough, knead it well for three to four minutes to make it smooth. After this, cover the dough with a cloth for half an hour and keep it aside. After the stipulated time, mash the dough once again. Now the dough is completely ready for making matthi. Now prepare a big ball of dough by breaking it and then flatten the dough by placing it on a wheel and roll it like a roti. Keep in mind that it should be like a thick roti.
