To make brinjal cutlets, brinjal is coated with potatoes, french beans and other spices. After this it is roasted till it becomes golden brown. You can definitely try this recipe once.

Ingredients for making Eggplant Cutlets
Eggplant – 3-4
Potato – 2
Carrot – 1
French Beans – 1/4 cup
Ginger grated – 2 tsp
Green chilies chopped – 3-4
Onion – 1
Bread Powder – 1/4 cup
Green coriander chopped – 3 tbsp
Mint leaves – 1/4 cup
Garam Masala – 1/2 tsp
Amchur – 1/2 tsp
Oil – as required
Salt – as per taste

How to make Eggplant Cutlets
To make brinjal cutlets, first take brinjals and cut them. After this, cut potatoes and French beans and carrots into pieces. Now put some oil in a pan and fry all these vegetables in it. Add salt as per taste in it. When the vegetables become soft, turn off the gas and let them cool down. Now chop the onion, green chili and add ginger and prepare a paste of these three and keep it aside.

Now take a mixing bowl and put all the roasted vegetables in it and mash it well. After this, add green coriander, mint leaves, amchur, garam masala to this mixture and mix them all well. Add salt as required in it. Now prepare small and round cutlets from this mixture and keep them aside in a plate.
Now take a wok and put oil in it and heat it. Till the oil is getting hot, wrap the cutlets one by one in the bread crumbs. When the oil becomes hot, put the eggplant cutlets in the oil and deep fry them till they become golden. After that take it out in a plate separately. After all the cutlets are fried, turn off the gas. Delicious eggplant cutlets are ready. Eating it at any time of the day can satisfy hunger.
