Ingredients for Aloo Kofta
Potato – half kilo
Arrowroot – 4 tbsp
Cashews finely chopped – 10-12
Green coriander chopped – 2 tbsp
Salt – as per taste

Tomato – 5
Onion – 5
Cream – 1 cup
Red chili powder – 1 tsp
Coriander Powder – 1 tsp
Turmeric Powder – 1/2 tsp
Green chilies chopped – 2
Coriander chopped – 1 tbsp
Ginger – 1 inch piece
Oil – 3-4 tbsp
Cumin – 1 tsp
Garam Masala – 1/2 tsp
Salt – as per taste
How to make Aloo Kofta
To make potato koftas, boil the potatoes and peel them and grate them in a vessel. Then mash the grated potatoes well with hands. Now add arrowroot, chopped coriander and salt to the potato and knead it. Now put potato mixture on the palm and prepare balls of cashew nuts in it. Make balls from all the potato mixture by placing cashews in the same way. Keep all these balls separately in a plate.

Now take a wok and put oil in it and heat it. After the oil is hot, put the prepared potato balls in it and keep frying them till they become light golden. During this, keep turning the balls with a ladle. When the balls are fried, take them out in a plate separately.
Now to make the gravy, first of all finely chop the onion, tomato and green chili. Then take the cream and beat it well. Now put some oil in the pan and keep it to heat. After the oil is hot, add cumin seeds and let it splutter, then add onion and fry till it becomes golden. After this add tomato, ginger, green chili and cook for 5-7 minutes.

Now add coriander powder, red chili powder, turmeric in the gravy mixture and fry it after mixing it with a ladle. Now turn off the gas. When the masala cools down, grind it with the help of a mixer. Now once again put oil in the pan and heat it and put ground spices in it. Simultaneously add cream to the pan and mix. We have to fry the gravy till it starts leaving oil.
After the gravy leaves the oil, add about two cups of water to the pan. Add salt to it and let it cook till it boils. Now add the fried koftas to it and cook for 2-3 minutes. Tasty potato koftas are ready for your dinner. Garnish it with green coriander leaves before serving.
